The title says party nachos. I have OFTEN made these babies on my own, with a bottle of wine and some bad movies. The recipe was invented one night in Hamilton, ON, after a trip to the supermarket at 2am, various types of shots, and hanging out with an Australian who had a case of the munchies. It’s an easy, delicious party pleaser. Cian made home-made guacamole yesterday,(recipe to follow) and I used it for my nacho sauce, but feel free to buy some fresh guacamole if you’re feeling lazy. (Do not buy the gross one in a jar, only buy one if it’s fresh, if not leave it our altogether!) If you feel like making it spicy, sauce some jalapeños in with the onion and garlic. I made this on my sister Gail’s hen, and if my memory serves me right, it was a hit! Like most Mexican good, it’s not the greatest visually, but my God it tastes good!
Ingredients:
1.5 cups of grated cheddar cheese
1 cup of salsa
3/4 cup of guacamole
half a tin of black beans. (or pinto or kidney, whichever you prefer)
diced garlic clove and half a diced onion
Chili powder, sea salt and black pepper.
bag of salted nachos (doritos, whatever your preference is)
2 spoons of sour cream
Directions:
1) Sauté garlic and onion together in some oil. Add chili powder, salt and pepper on a low-medium heat.
2) Add all of the ingredients (but only one spoon of the sour cream), bit by bit and keep stirring until cheese is melted and it’s bubbling.
3) Serve over tortilla chips with a dollop of sour cream on top. Cian likes to layer the nachos in the sauce, but up to you!
